A Recipe Inspired by Kia Damon: Spiced Coconut Jerk Shrimp

Kia’s cooking is all about blending flavors from different cultures while honoring her Southern and Caribbean roots. This Spiced Coconut Jerk Shrimp recipe embodies her bold, vibrant, and soulful cooking style.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 can (13.5 oz) coconut milk
  • 1 tbsp honey
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1/2 small onion, diced
  • 1/2 tsp thyme
  • 1/2 tsp allspice
  • 1 tbsp fresh cilantro, chopped
  • 1/2 cup diced pineapple (optional, for a sweet kick)
  • Cooked rice, for serving

Instructions:

  1. In a bowl, toss the shrimp with jerk seasoning, smoked paprika, and a drizzle of olive oil. Let marinate for at least 15 minutes.
  2. Heat a pan over medium heat and sauté the onions and garlic until fragrant.
  3. Add the shrimp and cook for 2-3 minutes per side until slightly charred.
  4. Pour in the coconut milk, honey, thyme, allspice, and lime juice. Stir well and let simmer for about 5 minutes.
  5. Add diced pineapple if using and simmer for another 2 minutes.
  6. Garnish with fresh cilantro and serve over rice.
